Three Unique Grilled Cheese Recipes from Head Chef, Ted Corrado 

Our Head Chef, Ted Corrado was featured on Breakfast Television on Monday, April 12th in celebration of National Grilled Cheese Day! He was able to share three different grilled cheese recipes, including a vegan grilled cheese option as well, using ingredients that can be found in our Summerhill Market locations. Here are the three recipes that Chef Ted shared in his segment:

1. Spanish Grilled Cheese 


– Brodflour Sourdough

– Iberico Ham

– Manchego Cheese

– Mahon Cheese

– Piquillo Peppers

– Butter

Paired with: Garlic Stuffed Olives and Lobster Bisque

2. Classic Grilled Cheese


– Brodflour Pullman Loaf

– Aged Cheddar Cheese

– Camembert Cheese

– Vine Ripe Tomatoes

– Fresh Thyme

– Mayonnaise

Paired with: Fuji Apples and Tomato Basil Soup

4. Vegan Grilled Cheese


– Gluten-Free Bread

– Ripe Avocados

– Vegan Cheddar Slices

– Miyokos Vegan Butter

Paired with: Butternut Squash Soup

Three Unique Grilled Cheese Recipes from Head Chef, Ted Corrado, 2021


Along with his recipes, Ted also made sure to speak about his favourite tips and tricks on how to make the PERFECT grilled cheese on the stovetop. 

To start off, make sure the bread is not sliced too thick in order to let the cheese melt properly when on the pan. One of his favorite tips is to replace the butter with mayonnaise and spread on both sides of the bread for a crisper exterior and fluffier, moist interior. 

After assembling the ingredients into the sandwich, ensure that the pan starts on HIGH heat but once the sandwich hits the pan, turn it to MEDIUM heat and let it simmer. Don’t forget to add a little olive oil before placing the sandwich into the pan to avoid the bread from sticking to the pan. Once the bread is on the pan, press down to help with the melting of the cheese and keeping the sandwich together. 

As seen in his recipes, grilled cheese goes best when dipping it in soup so try out those above combinations next time you make one! We were super excited to hear from Chef Ted as he shares his expertise on his love of grilled cheese!
