Carve out some time for a healthy treat 🎃 Save your seeds when carving your Jack-o’-lantern this Halloween to make Spiced Pumpkin Seeds. These delicious seeds are a great snack with all of the flavours of fall.
This recipe is vegan, gluten free, high in fiber, protein and antioxidants!
Ingredients:
Seeds from 1 pumpkin
1 tsp coconut oil (melted)
¼ cup maple syrup
2 tsp cinnamon
1 tsp nutmeg
â…› tsp salt
Method:
•Begin carving your pumpkin and scrape out all of the seeds
•Separate the seeds from the pulp
•Soak the seeds in water overnight
•Stir together the coconut oil, maple syrup, cinnamon, nutmeg and salt
•Wash, strain and dry the soaked seeds
•Add the seeds to parchment paper
•Pour the spiced liquid overtop
•Bake @ 325°F for 25-30 minutes
•Stir every 5 minutes
•Take out of the oven once the seeds are dark and hard
•Let cool
