Start your day off right with an easy & delicious, French twist on traditional banana bread! Transform breakfast time into something special by turning this classic favorite into scrumptious French toast – sure to be loved by the whole family.
Ingredients:
- 1 Summerhill Banana Bread Loaf
- 5 large eggs yolks
- 1/2 cup milk, oat milk or almond milk
- 1 tsp vanilla extract
- 2 tsp cinnamon
- ½ tsp Himalayan sea salt
- Butter or coconut oil for cooking
Method:
- Slice the banana bread into ½ inch slices and lay flat in a rimmed bake sheet.
- In a bowl whisk together the egg yolks, milk, vanilla, cinnamon and salt and pour over the top of the banana bread.
- Let soak in for 5 minutes and flip for another 5 minutes.
- Heat a large skillet over medium heat. Once hot, turn down the heat to a medium-low.
- Add the butter or oil and cook 2-4 slices at a time until each side is golden brown.
Serve warm with Summerhill Maple Syrup and caramelized bananas or fresh berries and cream.
